Starrcade 1983: Roddy Piper vs Greg Valentine in a dog collar match. Starrcade 1984: Ric Flair vs Dusty Rhodes $1,000,000 challenge match. Starrcade 1999: Chris Benoit vs Jeff Jarrett in a ladder match for the US title. Starrcade 2000: WCW champion Scott Steiner vs Sid Viscous (personal reasons).

Interesting you mention the Vicious/Steiner match from Starrcade 2000...the infamous broken leg match. My favorite matches from Starrcade are:
Starrcade '83: Flair vs. Race Cage Match for NWA title
Starrcade '86: Skywalkers Match: Midnight Express vs. Road Warriors
Starrcade '88: Rick Steiner vs. Mike Rotunda for TV title (If you watch this match, the crowd pops louder for Steiner's win than anything else on the card!)

You're right. I popped in my Starrcade 2000 DVD...this match Sid got put in the recliner 3 times.

Before my WCW watching time but still gotta/HAFTAH~! say the Dog Collar Match between Roddy Piper and Greg Valentine from '83...
One of the most brutal matches you're ever likely to see without being ultraviolent!
